Corn Pudding From Aileen Schwartz

Last week, after the Dershowitz party, Aileen Schwartz sent me this message. Apparently, she brought her corn pudding to the gathering and 5 different people asked her for the recipe. So she thought she would pass it on to all. Here is what Aileen had to say about the dish.

Hope everyone is enjoying their summer. Below is the recipe for Corn Pudding. I doubled the recipe for the party. Enjoy!


Corn Pudding

1 stick softened margarine
2 eggs beaten
1 can creamed corn
1 can corn niblets
8 oz sour cream
1 box Jiffy Corn Muffin Mix

Heat oven at 350 degrees. Mix together well, margarine, eggs, cans of corn and sour cream. Add Jiffy Corn Muffin Mix and stir all together. Pour into baking dish. Bake at 350 for 45 minutes. Serves 8. Enjoy.
